Zoomed Basking

I got my Uromastyx (Koopa!) three days ago and love him. I have his night time temps around 72.5 degrees, his day time hot side air temp at 103, Basking Spot at 120, cool side around 90. I also have an auto-digital timer that turns his two lamps (one UVB/UVA zoomed 100w bulb, one basking bulb 100w as well) at 7am, and turns them off at 8pm. I'm pretty sure after comparing like 10 different care sheets that I've got the right idea. So far, I've tried feeding him Mustard Green, Cucumber, Grated Apple, and Blackberries. He seems to really enjoy the mustard greens over everything else so I think I'm just going to stick with leafy greens daily and maybe offer fruit once or twice a week to see if he gets a taste for it. My question is, how often should Koopa be fed? I'm in the army national guard and will be going away again for 8 months so my mom and girl friend will be taking care of him. I want to make sure I get all the right info to tell them for caretaking.
